Chocolate Avocado Pudding

Serves: 1 (small) or 2 (large). Prep: 15 mins + chill time.
INGREDIENTS:
- 1 ripe avocado
- 2 tbsp unsweetened cocoa power
- 2 tbsp. Agave Syrup (+ more to adjust)
- 2 tbsp orange juice
- 1 tsp vanilla essence
- 75ml tepid water
- to garnish: nuts and/or soft fruits e.g. raspberries
METHOD:
- Cut the avocado and scoop out the flesh (discard the skin)
- Add the avocado, vanilla essence, coco powder, orange juice an 2 tbsp. of the agave syrup in a blender Blend until smooth.
- Check the mix for taste. If the chocolate taste is too strong/bitter, add some more agave syrup and blend again
- When happy with the taste, add the water and blend again until well mixed
- Transfer the mix into serving bowl(s) and refrigerate until set.
- Once chilled, garnish with the and/or soft fruits and serve immediately
