Chocolate Avocado Pudding

Serves: 1 (small) or 2 (large). Prep: 15 mins + chill time.

INGREDIENTS:

  • 1 ripe avocado
  • 2 tbsp unsweetened cocoa power
  • 2 tbsp. Agave Syrup (+ more to adjust)
  • 2 tbsp orange juice
  • 1 tsp vanilla essence
  • 75ml tepid water
  • to garnish: nuts and/or soft fruits e.g. raspberries

METHOD:

  • Cut the avocado and scoop out the flesh (discard the skin)
  • Add the avocado, vanilla essence, coco powder, orange juice an 2 tbsp. of the agave syrup in a blender Blend until smooth.
  • Check the mix for taste. If the chocolate taste is too strong/bitter, add some more agave syrup and blend again
  • When happy with the taste, add the water and blend again until well mixed
  •  Transfer the mix into serving bowl(s) and refrigerate until set.
  • Once chilled, garnish with the and/or soft fruits and serve immediately
